Problems attacking the Ottomans

I am pretty much experienced. I want to attack the BIG Ottos as Angevine in 1530's while they are in a golden era. He has 0 manpower, and I attacked with +1 mil level, and 50 spionage, while having similar troops (Me with my allies +100k troops). They have120 quality (offensive + quality), and me 110. Their morale is 4.5, vs mine 5.5. I have +260k manpower. With that quality each time he touches my troops, I lose nearly all my troops, and the war is over ten years long... Any idea I don't find handling this?
